They are fresh-cut the date the order is shipped, these are all center cut with no waste no trim and vacuum sealed in the portion size.
We do offer straight fillets if you do not want it portioned and would prefer something like 2 pounds in prime cuts where there would be no belly no bones and no tales.
Some may question the price but we eliminate all the waste that's involved in straight off the bone fillets.
We try to make our portions within a half an ounce variance, and primarily the same thickness so your cooking time would be standard as you know fish fillets are thicker on one end and they are the other and that's why we have and try to use center cuts only, as the price disparity between us and our other competitors.
